AOKI Shuzo is located in the northern prefecture of Niigata, known as the snowiest region in Japan. The brewery has been brewing continuously for over 300 years, benefitting form the cold brewing conditions and high skill of the region's Echigo Sake brewer's guild. The leading spirit at AOKI brewery is the idea of "wago", a deep appreciation of every step and person involved in the process of making Sake, from growing the rice to the final consumer.
While Niigata style Sake tends to be light, elegant and dry, the signature brand KAKUREI is aiming to emphazise the pure and rich umami of the Sake rice.
