SENKO HANABI refers to the sparklers and fireworks which light the skies over Japan to celebrate Summer. The aromatic of this Junmai Daiginjo is light & layered with notes of caramel and ceder wood. The mouthfeel is smooth with soft flavours of white chocolate, dried fruit and apricot.

SENKIN brewery in Tochigi prefecture just north of Tokyo has been brewing Sake for over 200 years. The current brewery owner Mr. Usui was in his early thirties and used to work as a wine sommelier when he took over the brewery in 2003. He renovated the brewery and has since focussed brewing Sake with only local ingredients, introducing the idea of terroire. Senkin Sake are highlighting the quality of the local rice and water and tend to be higher in acidity, lending them a luscious and winelike character.
