This rare and very limited brew from Senkin Shuzo is different every year. Brewed with local organic rice and with ancient Edo period techniques. The 2022 version is heavy on rich aromas as tabacco, cherry cask and shiitake. The nose contrasts to fine notes of green apple, clover and caramel. The juicy and balanced body appears super mild and wonderful to drink.

SENKIN brewery in Tochigi prefecture just north of Tokyo has been brewing Sake for over 200 years. The current brewery owner Mr. Usui was in his early thirties and used to work as a wine sommelier when he took over the brewery in 2003. He renovated the brewery and has since focussed brewing Sake with only local ingredients, introducing the idea of terroire. Senkin Sake are highlighting the quality of the local rice and water and tend to be higher in acidity, lending them a luscious and winelike character.
