With a wonderful set of fig, pear and citrus notes, the aroma of Senkins Modern Muku is exciting from the start. On a second nose, hints of buckwheat, light orange and rose can be found. The soft but fruity body is accented by notes of pear and savoury umami.

SENKIN brewery in Tochigi prefecture just north of Tokyo has been brewing Sake for over 200 years. The current brewery owner Mr. Usui was in his early thirties and used to work as a wine sommelier when he took over the brewery in 2003. He renovated the brewery and has since focussed brewing Sake with only local ingredients, introducing the idea of terroire. Senkin Sake are highlighting the quality of the local rice and water and tend to be higher in acidity, lending them a luscious and winelike character.
