The family owned OBATA SHUZO brewery was established in 1892 on Sado Island - a small and native island near the coast of Niigata. The breweries credo is to brew sake in harmony with the four elements: rice, water, master brewer and terroir (四宝和醸 shi-ho-wa-jo). These four cornerstones recur on the label of the MANOTSURU brand, the four eyes. All their sake is brewed with locally grown organic rice. The brewery is surrounded by two large mountains, which cause a faster runoff of the rain and extract most of the contained minerals. Thereby, the water used for sake brewing is soft and smooth.
