YOSHIMURA HIDEO SHOTEN is located in the middle of Wakayama’s beautiful mountain range. Since 1915 the brewery produces a wide range of premium sake and fruit liquors with ingredients sourced directly at the brewery. Akiko Fujita is one of the few female toji (master brewer) in Japan. Her style is characterised by a delicate balance of umami, minerality, acidity and fruitiness. The majority of brews at YOSHIMURA HIDEO SHOTEN is stored at least three years at temperatures around 5 °C which lends the sake smooth depth and complexity. Most of the brewery’s brand KURUMAZAKA are brewed with the traditional and labour intense yamahai and kimoto method, which creates edgy and funky aroma and taste.
